This is my first all raw/vegan winter, and as you may know, it is freezing here! -25 is not a rare thing! If you are also a raw-vegan living in a cold climate, it would be important to add extra “heat” to your meals. There are different ways to do this: herbs and spices, using the dehydrator and of course the traditional-non-traditional soups.
My latest creation is this beautiful and tasty vegetable soup 🍜 in a warm water, dried tomato base. To this broth I added some tomatoes, corn, zucchini, onions, carrots, red peppers, lettuce, pumpkin seeds, herbs & spices.
After soaking the tomatoes about 30 minutes or so, I discarded the soaking water and simply added fresh warm water and sent it all to the Vitamix (blender). While my tomatoes were soaking, I chopped up all the veggies and put them in the bottom of a big serving bowl. I added the broth to the veggies and voilà, raw-vegan vegetable soup to add a little extra warm and cuddles to a cold winter day!
So delicious, appreciated by the entire family, healthy, and of course warming 💛
